Handmade in Nuremberg, Germany and gluten-free from the very beginning- using a nearly unchanged from the recipes used in the Medieval period for Lebkuchen. 

Ingredients: Hazelnuts, almonds, natural honey, white sugar, brown sugar, candied orange peel, candied lemon peel, egg white, apricot jam, gingerbread spice, sea salt, sodium bicarbonate, hartshorn salt, glaze (cocoa butter, soya lecithin, sugar) icing (powdered sugar, egg white) oblaten water (potato starch, cornmeal, cornstarch).

Named after the daughter of a gingerbread baker from Nuremberg, Elisenl ebkuchen are soft round gingerbread cookies baked on top of a thin wafer. They are served either plain or covered with a thin layer of icing or dark chocolate and are sometimes decorated with whole almonds as well.

What distinguishes Elisen lebkuchen from other types of German gingerbread, and what makes them so special, is that they contain little to no flour. To be able to be called Elisen lebkuchen, their total flour content must not exceed 10 percent (and they must contain at least 25 percent nuts). In fact, many bakeries pride themselves with not using any flour in their Elisen lebkuchen; instead, their primary ingredients are ground almonds and hazelnuts, which keep the Elisen lebkuchen wonderfully moist for weeks.
